Flapjacks food truck now open for breakfast

New Monmouth food truck serves up flippin’ good pancakes and more

The Annex food truck lot is finally full, thanks to the brand new Flapjacks truck that opened on Feb. 15. Owner Karna Reynolds cooks up delicious and unique breakfast foods for the Monmouth community.

Originally from Medford, Reynolds moved to Monmouth for a change of scenery.

“I’ve had my food cart for 10 years,” Reynolds said. “Down there, I did tacos.” 

Reynolds said it was time for her to venture out. She flipped her menu upside down to serve up something special for her new community in Monmouth.

Flapjacks has something for everyone — from specialty pancakes, to hearty biscuits and gravy, to hot oatmeal, to fruity smoothies, every entree is made to order. Already, the biscuits and gravy and the birthday cake pancakes are their best sellers, Reynolds said. Her homemade biscuits are topped with gravy loaded with sausage, bacon and tons of flavor; it’s her personal recommendation.

Fresh and creative food is what Reynolds prides herself in. Her menu promises high quality ingredients and food “made with love,” and she enjoys experimenting with a variety of fruits, seasonings and other ingredients to give customers something one of a kind. 

“We like different as human beings,” Reynolds said. 

Reynolds will even throw something new together on a whim, meaning each day may offer a unique menu.

“Today I made a … cinnamon banana swirl pancake,” Reynolds said in regards to her menu that day. “The other day, I came up … (with) a walnut pear pancake.”

For now, Reynolds hopes to grow her business at The Annex. Several years from now, Reynolds has dreams of opening a sister location in Independence — providing the community with the breakfast food truck they want, but small and local enough that she can still run her business independently.

Monmouth da la bienvenida a un nuevo camión de comida que echa humo

La tienda de delicatessen y barbacoa The Loaded Grill abre sus puertas en Monmouth

Un nuevo camión de comida ha abierto en Monmouth - The Loaded Grill, una barbacoa y deli-estilo de comida, ahora está sirviendo a los clientes en el anexo junto a la barra de Donut. Propietario Eric Brown y su esposa celebró un suave abierto el 12 de enero. 

Brown decidió abrir otro camión de comida junto al Donut Bar para apoyar a Limitless Ministries, la iglesia que ayudó a Brown a adquirir el solar de The Annex.

"Siento esta obligación, porque la iglesia ... hizo mucho por mí y por mi negocio", dijo Brown. Sin embargo, Brown afirmó que las condiciones de la pandemia han dificultado la llegada de otros propietarios de camiones de comida al solar. Tras ver la necesidad de alimentos frescos en la comunidad, él y su mujer abrieron un local para servir bocadillos y barbacoa.

Brown construyó él mismo The Loaded Grill y lo diseñó pensando en los clientes. El camión tiene un gran toldo y mostradores que proporcionan un espacio seguro entre el personal y los clientes. Además, mientras esperan su pedido, los clientes pueden ver exactamente lo que hay en su comida a través de la ventanilla.

Los platos favoritos de los fans de The Loaded Grill ya incluyen apetitosos nachos de pulled pork, bocadillos de albóndigas calientes y sándwiches de pulled pork perfectamente preparados ⏤ que puedo recomendar personalmente. El local también ofrece comidas enteras por un precio asequible y, ciertos días de la semana, venden pollos enteros ahumados con Traeger que pueden alimentar a toda una familia o a una sola persona durante unos días. 

De momento, The Loaded Grill abre de martes a jueves de 11.00 a 18.00 horas, aunque Brown espera poder abrir los fines de semana a finales de febrero. En cuanto a planes de futuro, Brown quiere seguir devolviendo a la comunidad todo lo que pueda.

"Voy a utilizar mis redes lo mejor que pueda", afirma Brown. "Una vez que nos establezcamos y consigamos un poco de consistencia, empezaremos el nuevo año con más cosas: más recaudaciones de fondos, más regalos".

Artist Spotlight with musician Neal Cranston

A Western student and musician with many talents

While majoring in history and minoring in geography at Western, senior Neal Cranston has still been able to build himself a strong audience for his music over the years. Cranston taught himself how to play the guitar, harmonica and has continuously developed 14 years of experience with the piano. He regularly explores different areas of music, but the piano is his favorite instrument to play. Cranston said he learned to “train the ear to play what you hear;” he admits it’s not the most traditional route to go when mastering instruments, but it’s kept his passion for music alive because of its organic roots.

He first found his passion for music in the third grade, where he began teaching himself to play piano by ear. He was first drawn to music on his own and spent time at home in Canby, OR ⏤ where he trained his ear to pick out melodies and practiced his piano skills. After he started honing his talents in different music genres and gaining more experience, a family friend encouraged him to take lessons and explore the scales on the piano. 

The years of his hard work have paid off, with his talents booking him in-person gigs at restaurants, weddings and wineries. Cranston described one of his favorite experiences which occurred last December. He was playing Christmas music on a beautiful grand piano at a winery and saw CJ McCollum from the Portland Trailblazers in the audience. 

When he isn’t playing for venues or famous basketball players, Cranston works on his own music, and even released his first single, “Make it Without You,” this September on all streaming platforms.

With help from some friends, he was able to record and produce this single that incorporates old school rock with a modern vibe. He wrote the lyrics in a few days and crafted the rest of the song for a few months before releasing it, taking time to make sure the song stayed true to his rock roots and live band feel, while also taking influence from modern music.

Along with developing more albums and EPs, Cranston is also curating music that highlights his strengths in piano and other instruments. He hopes to release more music that incorporates raw human feelings and experiences, as he believes that “there’s a lot of power inside the human aspects of music.”

These days, Cranston can be found performing socially distanced shows at certain local restaurants and venues, like Wayward Sandwiches in Canby, OR. If he’s not performing in person, he’s probably developing his website, or posting more music on his YouTube page, Neal Cranston.
