For those of you who are aficionados in fancy cocktails, the \u201cLittle Fib\u201d beverage is for you.<\/p>\n<p><strong>What you need:<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wou.edu\/westernjournal\/files\/2017\/02\/unnamed-300x300.jpg\" alt=\"\" width=\"253\" height=\"253\" class=\" wp-image-5393 alignright\" srcset=\"https:\/\/wou.edu\/westernhowl\/files\/2017\/02\/unnamed-300x300.jpg 300w, https:\/\/wou.edu\/westernhowl\/files\/2017\/02\/unnamed-150x150.jpg 150w, https:\/\/wou.edu\/westernhowl\/files\/2017\/02\/unnamed.jpg 720w\" sizes=\"(max-width: 253px) 100vw, 253px\" \/><\/strong><\/p>\n<p>.75 ounce Liquore Strega<\/p>\n<p>.75 ounce Tequila Ocho Plata<\/p>\n<p>.5 ounce Death\u2019s Door gin<\/p>\n<p>.75 ounce Dolin dry vermouth<\/p>\n<p>.25 ounce Clear Creek muscat grappa<\/p>\n<p>.25 ounce St. George Spirits Green Chile vodka<\/p>\n<p>2 drops of saline solution or tiny pinch of salt<\/p>\n<p><strong>For Garnish:<\/strong><\/p>\n<p>One lime<\/p>\n<p>Matcha foam<\/p>\n<p><strong>Directions:<\/strong><br \/>\nAdd all of the ingredients to a mixing glass with ice and stir. Strain into a coupe, express the oil of a lime peel and garnish with the peel. Top with matcha foam.<\/p>\n<p><strong>How to make Matcha Foam:<\/strong><\/p>\n<p>Whisk 10 grams matcha with 600 grams hot water. Divide the tea evenly into two plastic containers. While still hot, add .95 percent gelatin by mass to the first container and whisk. Allow the second container to cool, then whisk in two percent xanthan gum by mass. Combine the two containers, and whisk in 1 barspoon hydrated gomme. Whisk in 100 grams of simple syrup and a pinch of ascorbic acid. Place in an ice bath to cool completely. Fill an iSi canister with ice water to cool. After 15 minutes, empty the water and fill the canister with the matcha foam base.
