This easy roasted tomato soup recipe hits the spot, especially when paired with a classic grilled cheese sandwich.<\/span><\/p>\r\n<p>&nbsp;<\/p>\r\n<p><span style=\"font-weight: 400\">ROASTED TOMATO SOUP<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">Start to finish: 55 minutes<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">Servings: five<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">3 pounds Roma tomatoes<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">\u00bd small onion<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">\u00bc cup olive oil<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">2 tablespoons minced garlic<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">1 teaspoon kosher salt<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">\u00bc teaspoon pepper<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">1 can evaporated milk<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">\u00bd cup grated Parmesan cheese<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">3 tablespoons fresh basil<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">2 tablespoons tomato paste<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">1 teaspoon sugar<\/span><\/p>\r\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wou.edu\/westernhowl\/files\/2020\/10\/soup-process-edited.jpg\" alt=\"\" width=\"4032\" height=\"3024\" class=\"alignnone size-full wp-image-16340\" \/><\/p>\r\n<p><span style=\"font-weight: 400\">Preheat the oven to 400\u00baF. Halve tomatoes and place cut side up with the onion on a rimmed baking sheet. Drizzle with oil and add garlic, salt and pepper. Stir to coat well. Roast for 40 to 50 minutes, just until starting to brown.<\/span><\/p>\r\n<p><span style=\"font-weight: 400\">Place in the blender and puree until smooth; leave the lid cracked slightly so the steam can escape. Add evaporated milk, cheese, basil, tomato paste and sugar. Puree until smooth once more, then taste and adjust seasoning to preference.
