In addition, making them at home can be a fun activity to do by oneself or with others.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-498x1024.jpg\" alt=\"\" class=\" wp-image-15923 alignleft\" width=\"284\" height=\"584\" srcset=\"https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-498x1024.jpg 498w, https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-146x300.jpg 146w, https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-768x1580.jpg 768w, https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-747x1536.jpg 747w, https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-996x2048.jpg 996w, https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-1080x2222.jpg 1080w, https:\/\/wou.edu\/westernhowl\/files\/2020\/05\/20200510_151349-scaled.jpg 1244w\" sizes=\"(max-width: 284px) 100vw, 284px\" \/><\/p>\n<p><span>STRAWBERRY OATMEAL BARS<\/span><\/p>\n<p><span>Start to finish: 55 minutes<\/span><\/p>\n<p><span>Servings: 16 bars<\/span><\/p>\n<p><span>1 cup old fashioned oats<\/span><\/p>\n<p><span>\u00be cup white whole wheat flour (all-purpose flour can substitute)<\/span><\/p>\n<p><span>\u2153 cup light brown sugar<\/span><\/p>\n<p><span>\u00bc teaspoon ground ginger<\/span><\/p>\n<p><span>\u00bc teaspoon kosher salt<\/span><\/p>\n<p><span>6 tablespoons melted, unsalted butter (coconut oil can substitute)<\/span><\/p>\n<p><span>2 cups small-diced strawberries (about 10 ounces divided)<\/span><\/p>\n<p><span>1 teaspoon cornstarch<\/span><\/p>\n<p><span>1 tablespoon lemon juice<\/span><\/p>\n<p><span>1 tablespoon granulated sugar<\/span><\/p>\n<p><span>OPTIONAL VANILLA GLAZE<\/span><\/p>\n<p><span>\u00bd cup sifted powdered sugar<\/span><\/p>\n<p><span>\u00bd teaspoon pure vanilla extract<\/span><\/p>\n<p><span>1 tablespoon milk<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span>Preheat the oven to 375\u00b0 F. Line an 8&#215;8-inch baking pan with parchment paper so that the paper overhangs two sides like handles.<\/span><\/p>\n<p><span>In a medium bowl, combine the oats, flour, brown sugar, ginger and salt. Pour in the melted butter and stir until it forms clumps and the dry ingredients are evenly moistened. Set aside a \u00bd cup of the crumble mixture, then press the rest into an even layer in the bottom of the prepared pan.<\/span><\/p>\n<p><span>Scatter half of the strawberries over the crust. Sprinkle the cornstarch evenly over the top, then sprinkle on the lemon juice and \u00bd tablespoon of the granulated sugar. Scatter on the remaining berries, then the remaining \u00bd tablespoon of sugar. Sprinkle the reserved crumbs evenly over the top, but know that some of the fruit will show.<\/span><\/p>\n<p><span>Bake the bars for 35 to 40 minutes, until the fruit is bubbly and the crumb topping smells toasty and looks golden. Place the pan on a wire rack to cool completely; the process can be sped up by placing it in the refrigerator.<\/span><\/p>\n<p><span>While the bars cool, prepare the glaze. In a medium bowl, briskly whisk together the powdered sugar, vanilla and milk until smooth. Feel free to add more milk if a thinner consistency is desired. Using the parchment-paper handles, lift the bars from the pan.
